Pupusas are hand made stuffed tortillas with a variety of flavors.

They are traditionally served with a vinaigrette "slaw" of sorts called Curtido...and a mildly spicy tomato sauce on the side for dipping.

Chef Sonia Marciante is from El Salvador, and prepares these

regularly for Familyl & Friends (sometimes for sale at Chef Tony's) as a sort of "pop up" dining opportunity.

Through much conversation, we have convinced her to open up and show us this amazing Dish that pretty much MADE Salvadoren cuisine.

We will show you three types and cook live in the kitchen at Chef Tony's Rockville.
